The results from Hyatt Regency Sanctuary Cove restaurant sub-metering project established water conservation as a key area of improvement.
Benchmarking results
The project established the following benchmarks for water use at the restaurant.
The results presented in the table above show that the average cost of water per restaurant meal was $0.20 as for 1997 figures and local water costs.
WaterWise training had little affect
In November 1997 a stand-alone two hour WaterWise training seminar was conducted with approximately 15 staff supervisors. In the following days and weeks, no change was recorded in the Cove kitchen’s water use.
Dishwasher delivers real savings
In December 1997, a new water and energy saving dishwasher was installed in the Cove kitchen (see Equipment Details for dishwasher specifications). The following table shows the cost of water before and after installation of the new dishwasher.
Payback
With the total cost of purchase and installation of the new dishwasher at approximately $40,000 the Hyatt Regency Sanctuary Cove estimates it will recover its investment in less than two years.
Given the successful results and payback period of the Cove kitchen’s monitoring process, the Hotel installed a second similar dishwasher in October 2000 in the Banqueting Kitchen.
